A One-Day Beer and Tavern-Cooking Demonstration

CAMDEN, N.J. (Sept. 30, 2007) -- Brewery historian Richard Wagner and and his wife Anna returned to the Camden County Historical Society yesterday for the organization's second colonial home brewing demonstration. Wagner set up his hand-made, 18th-century beer-making gear in the side yard of historic Pomona Hall and mixed a porridge-thick wort of malted barley -- the first step in the process.

The afternoon-long demonstration, sponsored by Yards brewery of Philadelphia and Flying Fish brewery of Cherry Hill (inset), used the same kinds of hops, barley and wooden tools used to brew beer in Camden County 250 years ago when the drink was as popular as it is today.

Simultaneously throughout the afternoon, hearth cook Mercy Ingraham demonstrated typical colonial tavern cooking in Pomona Hall's large 18th-century kitchen. Here, she carves up a chicken that was roasted for hours on a twirling string near the flames.

Visitors also toured the recently-refurbished two-story Camden County Musuem as well as Pomona Hall, where the dining room table groaned with period-authentic faux food recreations and a setting of china, glass and other tableware of the sort the wealthy Cooper family would have used in the 1780s.
